Fudgy Chocolate, Oat and Date Cookies

Soft and fudgy cookies sweetened with medjool dates and banana. My go to afternoon pick-me-up.



Recipe:

--> Makes 12 cookies

Ingredients:

  • 1 cup Oat flour

  • 3/4 cup Oats

  • 10 Medjool dates (pitted)

  • 1/2 cup Margarine (I used Pure Sunflower spread but you could try subbing it for coconut oil if you would prefer)

  • 1/4 cup Cocoa powder

  • 1 Banana (the riper the better!)

  • 1 tsp Bicarbonate of soda

  • 1/2 tsp Baking powder

  • 1/4 tsp Salt

  • 1 tsp Vanilla extract

  • 1 Bar of dark chocolate, chopped up into chips (I used Nomo’s dark chocolate one – which is 85g)


Method:


  1. Preheat your oven to 175C, grease and line a baking sheet.

  2. Add all of the ingredients, EXCEPT the dark chocolate and ¾ cup oats, to a food processor and blend until a dough-like consistency has formed.

  3. Tip in the oats and chocolate and stir until combined.

  4. Line a baking sheet with greaseproof paper and spoon roughly 12 balls of dough onto it. Flatten these with the back of a fork (they don’t spread much whilst cooking).

  5. Bake for 8 minutes @ 175C

  6. Remove from the oven and allow to cool for at least 10 minutes before transferring to a cooling rack (they’re very soft so will break easily whilst hot).

  7. ENJOY (best stored in the fridge!).
