Soft and fudgy cookies sweetened with medjool dates and banana. My go to afternoon pick-me-up.
Recipe:
--> Makes 12 cookies
Ingredients:
1 cup Oat flour
3/4 cup Oats
10 Medjool dates (pitted)
1/2 cup Margarine (I used Pure Sunflower spread but you could try subbing it for coconut oil if you would prefer)
1/4 cup Cocoa powder
1 Banana (the riper the better!)
1 tsp Bicarbonate of soda
1/2 tsp Baking powder
1/4 tsp Salt
1 tsp Vanilla extract
1 Bar of dark chocolate, chopped up into chips (I used Nomo’s dark chocolate one – which is 85g)
Method:
Preheat your oven to 175C, grease and line a baking sheet.
Add all of the ingredients, EXCEPT the dark chocolate and ¾ cup oats, to a food processor and blend until a dough-like consistency has formed.
Tip in the oats and chocolate and stir until combined.
Line a baking sheet with greaseproof paper and spoon roughly 12 balls of dough onto it. Flatten these with the back of a fork (they don’t spread much whilst cooking).
Bake for 8 minutes @ 175C
Remove from the oven and allow to cool for at least 10 minutes before transferring to a cooling rack (they’re very soft so will break easily whilst hot).
ENJOY (best stored in the fridge!).
