Lotus Biscoff Oat Bars (DF, EF, NF, Vg)

Another Biscoff recipe coming in hot - I made these using Lotus's 'smooth Biscoff spread' and (after a couple of attempts) they turned out goooddddddddd.

(Recipe video for these can be found on instagram - @thedaisydiet)

THE RECIPE:

INGREDIENTS:

  • 150g DF marg (I used @purefreefrom sunflower spread)

  • 150g Smooth Biscoff spread

  • 90g Oats

  • 150g Self-raising flour

  • 1 tsp Vanilla extract

  • 180g Soft light brown sugar

  • 1 bar of NOMO chocolate, chopped to make chips

METHOD:

  1. Whack the flour, oats and sugar into a medium sized bowl and stir together (be sure to sieve out any sugar or flour-y lumps!). Mix in the vanilla extract.

  2. Melt the DF margarine and Biscoff spread together over a low heat, (making sure to give the mix a good stir every now and then so it doesn’t burn).

  3. Pour this into the bowl and combine.

  4. Finally, fold through the chocolate chips and press the mix into an 8 x 8 inch, greased and lined baking tin.

  5. Place in the oven for 25-30mins @ 180C.

  6. Allow to cool for 10 mins before turning out onto a wire cooling rack to cool completely.

  7. Cut, serve and ENJOY ! ! And as always - let me know if you try them out - I love seeing and sharing your recreations :D
